AhSeah's Crab Day 3

Been doing some reflections, surfing the net for answer.....However I realise something.
Seems like Western & Chinese Crab cuisine have their very distinct difference. The Western way of cooking crab focused on cooking the crab 1st and removing the meat as ingredients. Guess Chinese are more brute, taking the crab by their pieces and taking our own time and effort to dig out, enjoy the meat and process.
Then I look at japanese style......COLD dish.....Not my kind......

AhSeah's Crab Day 2

Seems like this discussion thingy not too bad afterall, got people teaching me how to choose crabs, kill crabs.....

But out of a class of 8, only 3 of us discussing.....Guess the other 5 must be internet goons or simply too stuck up to share experiences......

Still appreciate the sharing....So early morning I went out to buy ONE crab to try.....haha


But I realise it is not easy task to kill this little thing.....

And worst of all......I forgot i got no recipe so dunno what to do with it after chopping up....

In the end, just did some seasoning with salt and dump the whole chop up crab into the soup I am making.....

End State : Soup tasted funny, and Crab meat very hard.....!!

Any reason why? Anyone can help?

Processing of Crabs

Anyone can help? How to kill the crabs? Should I clean them up after I chopped them up?

Ah Seah's Crab Day 1

Wa....Sign up this cooking class and who know expects us to use Internet to find information 1st before the actual cooking starts.....(Wonder I pay so much money for what since i do the work more than the Instructor - Chef Spencer)

He wanted us to find "research" on "How to cook crabs...." so that we have a better head-start before we do the actual learning to cook on next week. He say this is what outside people call PBL and want the "learners" within our cooking class to learn and share with one another......

Was really thinking what kind of Crab I really like.......

Chilli?? Black Pepper ?? Creamy ?? Or Maybe cooked in Craypot with Bee Hoon??

Think I go for Craypot with Glass Noodle......Yeah Yum yum......

So I decided to spend some money to try the crab to see if I can get some inspiration to start....
(Excuse to eat only lah....Dunno can claim from Chef Spencer or not.....)


Looks good ah.....But how to cook???? If I know, I attend this class for what ?!??!?!

Anyway perhaps I should 1st learn how to choose crabs and kill them ......

Then find out the ingredients....

Lastly how to cook it maybe.....
